Vegan Chickpea Salad

This chickpea salad is a delicious plant based alternative to chicken, tuna and egg salad.

Ingredients
  

  • 1, 15.5 ounce can chickpeas rinsed and drained
  • 1/3 c. hummus I recommend garlic flavor for an extra kick
  • 2 tsp. rice vinegar
  • 1 Tbsp. fresh dill chopped
  • 1 Tbsp. fresh parsley chopped
  • salt and pepper to taste

Instructions
 

  • Place your rinsed and drained chickpeas in a bowl. Lightly mash the chickpeas with the back of a fork, keeping at least half of the chickpeas in tact.
  • Add in the remaining ingredients and stir.
  • Adjust seasonings as necessary.
