Chocolate Chunk Banana Bread

The best, no fail, one bowl recipe for chocolate chunk banana bread recipe that you'll ever need. Gluten free, dairy free and refined sugar free.

Ingredients
  

  • 1 1/2 medium bananas ripe, mashed
  • 2 eggs
  • 1/4 cup dairy free butter or coconut oil melted
  • 5 tbsp maple syrup
  • 1 tsp vanilla
  • 1 ⅓ cup almond flour
  • 1/3 cup oat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup chocolate chips dairy free

Instructions
 

  • Heat oven to 350 degrees.
  • Prepare a loaf pan by lining with parchment or spraying with olive or coconut oil.
  • Add the wet ingredients to a medium mixing bowl and whisk together.
  • Add the dry ingredients and mix until combined. Don’t over mix.
  • Add the chocolate chips and stir to combine.
  • Pour the mixture into the prepared pan.
  • Bake in the preheated oven for 35-40 minutes until a toothpick inserted in the center comes out clean.

Notes

I have tried using flax eggs in this recipe several times. The bread turns out, however, it is overly moist and falls in the center.
We use Enjoy Life or other dairy free chocolate chips to keep it dairy free. The mini chips are our favorite but the Enjoy Life Chunks are good too!
