Easy Coconut Curry Lentil Soup

This dish comes together in under 30 minutes making it a weeknight favorite. It is vegan friendly, tasty and filling. It is overflowing with goodness from delicate red lentils, warming spices, sweet coconut milk and herby cilantro. Serve it with basmati rice or naan for an easy meal.

Ingredients
  

  • 1 tsp. coconut oil
  • 1 small sweet onion diced
  • 4 cloves garlic minced
  • 1 tsp. turmeric
  • 1 1/2 tsp. curry powder
  • 1 tsp. salt
  • 5 cups. vegetable broth
  • 1 can petite diced tomatoes drained
  • 1 cup red lentils
  • 1 cup full-fat coconut milk
  • 2 cups kale chopped
  • 1/2 cup cilantro chopped

Instructions
 

  • Heat the coconut oil in a stock pot over medium heat.
  • Add onions and sauté for 4 minutes.
  • Add in the garlic and sauté 1 minute more.
  • Add the turmeric, curry and salt and stir for another minute until combined and fragrant.
  • Add in the broth and tomatoes and bring to a boil.
  • Add in the lentils. Lower heat to medium low and simmer for 15 minutes.
  • Stir in the coconut milk and kale and cook until the kale is just wilted.
  • Stir in the fresh cilantro.
