Dubai Chocolate Bars

My version of the Dubai Chocolate Bars are creamy, made with dates and packed with fiber! There's good reason why this recipe is viral; try it for yourself and see what the hypes all about!

Ingredients
  

  • 16 Medjool dates
  • 1 Tbsp coconut oil plus 1 teaspoon for chocolate
  • 1 cup kataifi
  • 3/4 cup pistachio butter
  • 1/4 cup tahini
  • 1 cup dark chocolate
  • 1/4 cup pistachios chopped

Method
 

  1. Line a baking sheet with parchment paper.
  2. Open the dates lengthwise, remove pits and lay flat in a 4x4 pattern on the parchment.
  3. Heat 1 tbsp coconut oil in a frying pan over medium heat.
  4. Add kataifi, breaking into small pieces. Sauté until crisp and golden brown. See recipe notes for alternatives.
  5. Transfer the toasted kataifi to a medium mixing bowl. Add the pistachio butter and tahini. Stir to combine.
  6. Spread the kataifi mixture evenly over the date layer.
  7. Melt the dark chocolate with 1 tsp of coconut oil in a microwave-safe bowl for 60–90 seconds, stirring every 30 seconds until smooth and shiny.
  8. Pour the melted chocolate over the kataifi layer and spread evenly to cover.
  9. Sprinkle the chopped pistachios evenly atop the melted chocolate.
  10. Transfer the pan to the freezer for 10–20 minutes until the chocolate sets.
  11. Slice into bars and serve.

Notes

Use high-quality dark chocolate for best results. I prefer something close to  70% cacao. 
Use fresh pistachios for maximum flavor and crunch.
Substitute corn flakes, rise krispies, unsweetened shredded wheat or unsweetened shredded coconut for kataifi, if needed. Of these swaps, only the coconut needs to be toasted in the pan. The others, just stir into the pistachio butter and tahini.
