Papas con Chorizo

Spice up your weeknight meals with this quick and easy papas con chorizo that's bursting with smoky flavor with a little kick. Option to make this into tacos.

Ingredients
  

  • 6 medium potatoes cut into bite-sized pieces, about 5 cups
  • 1 teaspoon extra virgin olive oil
  • 1 medium onion diced
  • 12 ounces soy chorizo
  • 1 teaspoon salt
  • 1/4 cup cilantro chopped

Method
 

  1. -Bring a stockpot filled with water to a boil. Add the potatoes and boil for 7 to 8 minutes until you can pierce with a fork. Drain and set aside.
  2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onions and saute until just starting to brown, about five minutes.
  3. Add the soy chorizo and break up with the back of a wooden spoon.
  4. Add the drained potatoes and stir to combine.
  5. Season with salt and cilantro. Stir to coat.
