Easy Mint Chocolate Protein Shake (Healthy Shamrock Shake)

If you are team mint chip ice cream, raise your hand! I SEE YOU!  Which is why I had to create a smoothie version with this mint chocolate protein shake. Mint chocolate chip made into a healthy, breakfast or post-workout worthy option…yea I did that.

Why you’ll love this smoothie

It’s a healthy version of the popular Shamrock Shake. In place of ice cream you will find a base of frozen banana and cauliflower (if you’ve been around here a while then you’ll know this is my tried and true smoothie base that brings the creamy factor). Mint leaves and cacao nibs naturally bring the “mint chip” flavor along with health benefits. Mint is good for digestion and cacao is packed with antioxidants.

It’s filled with fiber. Spinach, cauliflower, banana and cacao provide 6 grams of fiber in this shake.

It’s dairy free! Use your favorite non-dairy milk and plant based protein for a dairy free smoothie.

Ingredients for a mint chocolate protein shake

Non-dairy milk- I use unsweetened almond milk, but so many non dairy alternatives would work here such as coconut or soy.

Plant based protein- I like to use Vega Protein Made Simple Vanilla for its minimal ingredient profile, but feel free to use your favorite.

Cauliflower- Use frozen cauliflower to achieve a creamy base.

Banana- Not a fan of banana? Omit or replace with a pitted date to add sweetness.

Spinach- I use fresh spinach leaves in this smoothie recipe, but frozen would work too.

Mint- Fresh mint leaves add a bright, fresh flavor to this mint chocolate shake.

Cacao nibs- Feeling a little more decadent? Add your favorite dark chocolate chips instead.

How to make a mint chocolate protein shake

In no particular order, add the ingredients to a high speed blender. Blend well until a smooth consistency is achieved. However, note that there will be be bits of cacao nibs throughout the shake.

Pour into a glass and top with extra cacao nibs if desired .

Make it a dessert

If you want to make this shake as a dessert there are a few tips for making it a bit more decadent:

Add dairy free chocolate chips, like Enjoy Life brand, in place of the cacao nibs

Top with homemade magic shell by melting 2 tablespoons of dairy free chocolate chips with 1/2 teaspoon of coconut oil. Drizzle atop the shake and let it harden.

Ingredients Method

Ingredients
  

  • 10 oz plant based milk see note
  • 1 scoop vanilla protein powder
  • 1/2 cup frozen cauliflower
  • ¼- ½ frozen banana
  • 1/2 cup spinach
  • 1 Tbsp cacao nibs
  • 5 mint leaves

Method
 

  1. Add ingredients to a high speed blender and blend until smooth and creamy.
  2. Garnish with extra cacao nibs or mint leaves if desired.
