These perfectly crisp air fryer sweet potato wedges make for a healthy side dish or snack that is ready in minutes.

I absolutely LOVE sweet potatoes. What’s not to love? They are sweet, starchy and comforting. Not only are they extremely tasty but they are packed with vitamins, minerals, antioxidants and fiber. They are extremely versatile and can be added to baked goods, served atop salads, in smoothies, on tacos and even as a breakfast toast. But here they shine on their own, lightly spritzed with oil, air fryed to tender crisp and finished with fresh herbs and sea salt.

What you’ll need to make crispy air fryer sweet potato wedges

Sweet potatoes– I use the Jewel or Beauregard varieties, but I am sure it will work with many others. I would like to try Japanese sweet potato wedges in the air fryer next.
Oil– I often use olive oil or coconut oil to make these. I tend to use the olive oil when doing a simple salted sweet potato wedge with dried herbs. If using spices like smoked paprika and cumin I personally use coconut oil because I love the subtle sweetness of the oil combined with the earthiness of the spices. In fact, I am a huge fan of using coconut oil on most root vegetables as I find it complements them really well.
Salt– Kosher salt is my go-to!
Optional seasonings and flavor variations
While oil and sea salt are a delightfully simple way to enjoy these sweet potato wedges, you may find yourself wanting to spice them up from time to time. Here are some of my favorite combos:
- garlic powder, smoked paprika and cumin
- air fried with a little cinnamon and sugar and finished with a drizzle of maple syrup (a yummy breakfast side!)
- tossed with garlic powder and dried rosemary
- topped with a simple gremolata of parsley, fresh garlic, lemon zest, salt and pepper
- dipped in a chipotle aioli
- drizzled with tahini and topped with fresh cilantro and chopped pistachios
How to cut the sweet potatoes into wedges for air frying
First cut one sweet potato in half lengthwise. Place the halves cut side down and cut in half lengthwise again. Now you have 4 quarters. Cut those quarters in half lengthwise for a total of 8 wedges. Repeat with the remaining potato.

How to cook air fryer sweet potato wedges
After you’ve cut the two sweet potatoes into wedges, place them in a large bowl. Drizzle them with the oil and season with salt. Toss the wedges to ensure they are evenly coated.



Then preheat the air fryer to 385℉. Next, arrange the wedges in a single layer in the air fryer basket. Air fry the wedges for 18 minutes, flipping the wedges halfway through the frying time.
Tips for perfectly crisp air fryer sweet potato wedges
- Preheat the air fryer. When I first made sweet potato wedges I made the mistake of not preheating the air fryer. The result? A much longer frying time. Just as you would want your oven heated to the correct baking temperature, the same goes for your fryer.
- Cut the wedges evenly to ensure even cooking. The first step to achieving this is to choose sweet potatoes that are similar in size.
- Make sure the wedges line the basket in a single layer. If the wedges overlap, they will not crisp evenly.
- Flip the sweet potatoes halfway through cooking time to ensure perfect crispness on both sides of the wedge.

Crispy Air Fryer Sweet Potato Wedges
Ingredients
- 2 medium sweet potatoes cut into wedges, making a total of 16 wedges
- 2 teaspoons olive oil or coconut oil, or other oil of choice
- 1/2 teaspoon salt kosher
Instructions
- Preheat air fryer to 385℉.
- Cut the sweet potatoes into wedges and place them in a large bowl.
- Drizzle the potatoes with oil and season with salt. Toss to evenly coat all of the wedges.
- Arrange the wedges in a single layer in the air fryer basket.
- Air fry for 18 minutes, flipping the wedges halfway through the frying time. Continue to cook in one minute increments if the potatoes are not cooked through.
- Serve with your favorite sauce or toppings.
