Onion: I use purple onion but sweet onion works well too.

Bell Pepper: I like to use a red bell pepper, but any variety will work.
Garlic: Fresh cloves are best.
Vegetable broth
Tomato sauce: I like to buy canned San Marzano tomatoes and whiz them in a food processor or you can buy any canned/jarred tomato sauce of choice.
Tortellini: Fresh packaged in the refrigerator section, or frozen works as well.
Spinach: Or any other green of choice.
Salt and pepper: to taste
Optional: Fresh basil
How to Make Tortellini Soup
First start by heating the olive oil in a stock pot over medium heat. Add in the onions, carrots and peppers and sauté for about 5 minutes until the onions soften and become translucent. Add in the minced garlic and sauté for one minute more.
Next add the broth and tomato sauce, raise the heat and bring the soup to a boil. Once boiling add in the tortellini and cook according to package directions.
Reduce the heat to a simmer and add in the fresh greens, stirring until they are just wilted. If using, add in the fresh basil before serving.
